orange cake sugar and gluten free

Ingredients:
  • 2 oranges
  • 4 eggs
  • ¾ cup honey or maple syrup (just a little less if maple syrup)
  • 2 cups ground almond meal
  • ½ teaspoon celtic sea salt
  • 1 teaspoon baking soda
  • 4 teaspoons of unsweeten chocolate powder

Healthy Apple crumble


Ingredients 
For the filling:
zest of 1 orange
6 small apple (peeled and cut into small chunks)
3 teaspoons of maple sirope
1 teaspoon cinnamon, jinger and nutmeg
Juice of one lemon

For the crumble:
70g hazelnut powder
70g riolled oats
22g rice flour
1 teaspoon cinnamon
45g crushed almonds
1 teaspoon Stevia
100g coconut oil
Method:
1. In a deep small bowl, combine the apple chunks, stevia, cinnamon and lemon juice. This mixture can already be distributed over the bottom of the baking mold covering the whole surface. Let rest while we prepare the crumble to go on top.
2. In a separate bowl, mix the hazelnut powder, oatmeal, rice flour, cinnamon, crushed almonds, stevia and *coconut oil.
*Depending on the temperature of where you live, the coconut oil might be hard, liquid or a bit soft. Here in Belgium it’s cold enough for the coconut oil to remain hard, so what I did was to heat it up in the microwave for 30 seconds until it became creamy and then added it to the crumble mixture.
3. Mix with your hands to make sure all ingredients are well integrated. The resulting crumble mixture should be creamy, chunky and easily manipulated.
4. Distribute the crumble mixture over the apple layer.
5. Pre-heat the oven to 180°C and bake for 35 minutes.
